Lemon-Ricotta Pancakes with Berries
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup milk
1 egg
1/4 cup ricotta cheese
1 tablespoon lemon zest
1 tablespoon lemon juice
Fresh or frozen berries
Mix Dry Ingredients: Whisk together flour, baking powder, baking soda, and salt.
Combine Wet Ingredients: In a separate bowl, whisk together milk, egg, ricotta cheese, lemon zest, and lemon juice.
Combine Wet and Dry: Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
Cook the Pancakes: Cook pancakes on a greased griddle over medium heat until golden brown on both sides.
