Lemon-Ricotta Pancakes with Berries

Ingredients:

  • Fresh or frozen berries

Instructions:

  1. Mix Dry Ingredients: Whisk together flour, baking powder, baking soda, and salt.

  2. Combine Wet Ingredients: In a separate bowl, whisk together milk, egg, ricotta cheese, lemon zest, and lemon juice.

  3. Combine Wet and Dry: Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

  4. Cook the Pancakes: Cook pancakes on a greased griddle over medium heat until golden brown on both sides.

  5. Serve: Top with fresh or frozen berries and a drizzle of maple syrup.
